We are located in Historic Roswell, Georgia. You will be staying in our home surrounded by lots of trees to clean the air, a big deck overlooking a beautiful lake with lots of birds, waterfowl and other wildlife. We have the designation of a Certified National Wildlife Habitat. Come stay with us for two weeks to detox and learn.

What we eat after the fast!
Jackie Graff has been teaching raw food preparation and food science for more than a decade. An RN with 40 years’ experience in various areas of patient care and education, Ms. Graff is considered one of the country’s top raw food chefs and nutrition consultants.
She continues to teach raw food lifestyle classes throughout the country, was an instructor for Hallelujah Acres® Culinary Academy, and at the Hippocrates Health Institute in West Palm Beach FL. She has been frequently quoted in print and broadcast news outlets, including the Atlanta-Journal Constitution, Atlanta Woman magazine, Atlanta Jewish Life magazine, Fox 5 Good Day Atlanta, CNN Headline News, and North Georgia Today. Jackie is the author of 23 theme raw food recipe books, and has produced two instructional raw food DVDs. Jackie also contributed articles to several national and local magazines.
As an RN, Ms. Graff has held key hospital management positions and was a clinical instructor to nurses. She also served as an associate professor at Life University, teaching raw food instruction to returning alumni. She has an understanding of nutrition, anatomy and physiology of the human body and possesses a firsthand knowledge of the negative consequences of the Standard American Diet (SAD) on a person’s long-term health. She earned her B.S. degree in Nursing from the University of South Carolina.
Gideon Graff – along with Jackie has taught raw food preparation for almost a decade. His roles include raw food chef, health coach, and director of Sprout Raw Food, the Graff’s consulting and raw food catering and distribution business. He has served as an instructor for Hallelujah Acres® Culinary Academy. Gideon has 35 years experience in food and hospitality management. An accomplished public speaker, he is experienced in both conference planning and fund raising. Previously, Gideon and Jackie co-founded and operated the Sprout Café and Shinui Living Food Learning Center, a first-of-its kind center devoted to teaching and promoting the raw food lifestyle in Roswell, Georgia. Together they lost weight, and eliminated many physical problems, resulting in them no longer requiring blood pressure, cholesterol and other medications. They attribute their healthy state to eating raw foods.

MAY 2013 The Graff Academy of Raw Food Education- This was BY fay the most empowering 2 weeks of my life.. WHY? BEACAUSE I am back on the highway of health. For the past year I have been suffering with severe hormal imbalances, endometriosis,infertility, adrenal exhaustion and chronic fatique. I had to do something RADICAL to feel good again.. no matter what it took... I wanted to experience the passion of life again. My healing was PROFOUND... I "detoxed" on day 2! flu like symtoms.. Graff Academy of Health Science
Since 2000, the Graff Academy of Health Science, based in Atlanta has trained the next generation of leaders and teachers in holistic health and nutrition with raw vegan food. The Academy’s 1,000 graduates have gone on to successful careers as restaurant owners, raw food teachers, detox experts and nutrition consultants. In October 2016, the Graff Academy will conduct a two-week detox program in Southeast Florida.
Gideon Graff, Co-Founder, Academy Director
A native of Israel, brings 40 years in food and hospitality management to the Graff Academy as well as 16 years as a raw food chef and health coach.
As director of the Graff Academy, Gideon oversees the Academy’s learning curriculum and business and marketing strategy that has graduated hundreds of students. He brings significant knowledge of raw food nutrition and expertise in managing raw food businesses, including wholesale, retail and catering. He now applies that expertise to Graff Academy’s U.S. and international students, many of whom go on to establish their own raw food enterprises around the world.
Gideon previously served as an instructor for Hallelujah Acres® Culinary Academy. He also was co-founder of the country’s first raw food café and learning center, the Sprout Café and Shinui Living Food Learning Center in North Atlanta.
Katharine Clark, RN, CHC, CSAC-R, Director of Education at Graff Academy, brings 30 years of expertise in wellness and education. She trains people to regain and maintain their health though simple, affordable, natural methods of evidence-based self-care. Rather than focusing on what people eat, she teaches them how their body works, so they can make better decisions about caring for themselves, including diet and lifestyle. She also provides instruction on how to prepare a plant-based, uncooked culinary diet.
She graduated from the nursing program at Indiana University and is a 2013 graduate of the Institute of Integrative Nutrition (2013). She is certified in massage and hydrotherapy at the Florida School of Massage. A former Hippocrates Health Institute certified health educator, Katharine served a director of Education at the Institute from 2009 to 2011.
In addition, she was director of the Home Self-Sufficiency Center at Miami-Dade Community College, and developed the Wellness Program for The Farm at San Benito, Lipa, Philippines. For the last 30 years, she has owned and served as executive director for Healthworks Enterprises, Inc. a nutrition-based wellness company.
Katharine holds certifications in iridology, reflexology, colon hydrotherapy, rebirthing and alchemical hypnotherapy. She is currently applying for North Carolina Licensure from the Board of Nursing, which will allow her to be licensed as a registered nurse in 37 states and 17 countries around the world. She has studied Qigong for more than two decades and is certified in Wuji Qigong by Master Wan Sujian at the Beijing-based Traditional Medical Exchange Institute.

The Graff Raw Food Academy has bid farewell to our beloved co-founder Jackie Graff, RN, one of the country’s top raw food chefs and nutrition consultants, who passed away from cancer on December 7, 2015. In her 15 years as a raw food chef, nutrition science expert and author, Jackie built a national reputation for her raw food lifestyle classes.
Jackie’ spirit and creativity live on in our Academy. Her energy, knowledge and unique approach to raw food remain a focal point of the Academy’s courses and her example will continue to inspire our many Academy graduates, who have taken her teachings to their own communities and raw food businesses. It is our mission to honor Jackie’s lifelong passion to educate and inspire the community, and her philosophy remains at the heart of this raw food learning center.
