Master Sommelier Patrick Okubo

Pat Okubo is a Master Sommelier with the Court of Master Sommeliers one of 236 worldwide (149 in America), a Certified Wine Educator (CWE), and Certified Specialist of Spirits (CSS). Born and raised in Kaimuki he graduated from University High School in 2000. He holds a Bachelors in TIM (travel industry management) from University of Hawaii and a Masters in Organizational Development and Change from Hawaii Pacific University. He is a member of the Army National Guard, and runs The Wine GI, a personal wine consultation and education business. Pat is the Fine Wine Specialist and Wine Educator for Young’s Market Hawaii. Previously, he opened Formaggio Grill as Managing Partner and Wine Director / Restaurant manager at Four Seasons Lana’i.


Taittinger Brut La Française is a blend of Chardonnay, Pinot Noir and Pinot Meunier wines from at least 35 villages. The aging of Brut La Française on the lees for almost 4 years more than doubles the legal minimum of 15 months. This extra time in the cellars allows the wine to reach the peak of aromatic maturity, and the result is a delicately balanced Champagne, known for its consistently excellent quality.

The Gewürztraminer originates mostly from the warm, gravel soils of Herrenweg Vineyard. Zind-Humbrecht's dedication to terroir expression guides all winemaking practices, which include extended pressing cycles, abbreviated clarification cycles (to retain natural yeasts and proteins in the must), natural malolactic fermentation and extended aging on the lees. The wine is aged 8 months in 40-year-old French barrels.


An artisanal winery begun in the 1950s in Rías Baixas, northwest Spain, Bodega Don Olegario is a top producer of Albariño, the region’s most famous grape variety. At 312 feet in elevation, the 12.4-acre single vineyard has 30-year-old pergola-trained vines in sandy and granite soils with good drainage and east and west exposures. Indigenous herbs are planted among the vines for favorable drainage in the area’s wet conditions. Sustainable winegrowing is used, with organic compost; leaf and crop thinning are employed when necessary.


Reyna Albaresco The vineyards lie on the steep, southwest facing Langhe hillsides. Grapes are harvested an average of 10 to 15 days later than normal, resulting in extremely rich musts high in sugar and lower in acidity. Temperature controlled fermentation is followed by malolactic fermentation and aging in French Allier and Slavonian oak followed by additional aging in bottle.

Guidalberto is a second wine from the producers of the legendary Sassicaia. Grapes are harvested and transported to an independent cellar. Fermentation takes place separately for each variety in temperature-controlled steel vats before undergoing maceration. The wine is aged in French and American oak barrels and refined in bottle before release.


Quinta da Roêda forms the backbone of the Croft Vintage Porto, produced only in years when vineyard conditions are optimal and warrant a “declared vintage.” Wines from Quinta da Roêda are characteristically plump, full and vigorously fruity, with the hallmark aroma of the gum cistus bush—a character that informs the Croft house style. The grapes are trod by foot in granite lagares to minimize the release of harsh, bitter compounds from skins and seeds, and the wine spends two years aging in vat before bottling.

Chef Ronnie, who believes in the farm-to-table movement by visiting farms and building strong bonds with local farmers, brings in island fresh produce and breads, as well as 175 pounds of local grass-fed beef and 450 pounds of locally caught or raised fish every week. His delicious signature items and dinner specials that fuse Hawaiian/Pacific Island with American cuisine are the result of his dedication to the craft and cooking with locally grown and raised food. An effective and motivational trainer from both the front and back of the house, Chef Ronnie continues to be inspired by working with the best chefs in the world.


What are my transportation/parking options for getting to and from the event?

Free Valet Parking is covered for up to 3 hours with event. Valet is in the Aston Waikiki Beach Hotel on Paoakalani Avenue, and Tiki's is located on the ocean side of the upper lobby pool deck level.
