The Pig and the Lady consists of a yin and yang balance of daring invention (Chef Andrew) and home-cooked comfort (Mama Le). With this second edition of "The Lady and the Pig" with Mama Le taking the lead, she is going all out with the comfort food, with a special Vietnamese traditional and communal menu called Bò Bảy Món or literally translated as SEVEN COURSES OF BEEF! That's right, a selection of high end beef dishes from Vietnamese cuisine that is usually served at weddings and other special events and functions. It's definitely served during special occasions!
This being The Pig and the Lady, we're going to be sourcing the freshest ingredients, produce, and Kulana beef. If you've already experienced Bò bảy món, then think of this as the most locavore version ever.
BÒ BẢY MÓN (Seven Course Beef)
#1: GỎI BÒ
kulana flat iron steak salad, pickled carrots, daikon, celery, nuoc mam
#2: BÒ NHÚNG DẤM
kulana sirloin fondue
#3: BÒ LÁ LỐT
grilled ground beef wrapped in lá lốt leaf
#4: BÒ NƯỚNG MỠ CHÀI
grilled ground beef wrapped in caul fat
#5: BÒ NƯỚNG HÀNH
grilled kulana tenderloin, scallions
#6: BÒ CHẢ ĐÙM
steamed ground beef patties, prawn chips
#7: CHÁO BÒ

Worth noting that this style of eating is very similar to Korean BBQ, with lettuce, various veggies, and rice paper utilized to "wrap" the meats into gỏi cuốn (summer rolls, spring rolls) and dip them in various sauces like nước mắm (fish sauce) or mắm nêm (fermented fish sauce).
For this dinner, however, we'll have grill stations and our cooks will grill the courses next to your table (like Benihana, but without the theatrics). Well, Chef Andrew will probably provide some theatrics!
Seating is based on a first come first serve basis and WILL BE family style. Minimum 4 people required per seating. NO DIETARY SUBSTITUTIONS.
