Event description

Description

Rediscover holiday baking with four recipes that boast elegant, bold flavor but simple ingredients. In Central and Eastern Europe, a golden-brown bread containing a rich, dark swirl of poppy seed filling goes by many names: mohn kuchen in Germany, makowiec in Poland, mákos beigli in Hungary. Regardless of the country, the recipe for the roll is much the same: a sweet, yeasted dough swirled with a dense, unctuous filling of poppy seeds and sugar. In class, we'll break down the steps of this stunning breakfast table centerpiece. For an more formal dessert, we skip the cloying decadence of pecan pie in favor of a more refined French option with lightly caramelized walnut filling pressed into a whole wheat crust. We turn to Switzerland to simplify our holiday cookie platter; chocolate and spices combine in one (gluten-free) treat that is reminiscent of a ginger cookie and a chocolate crinkle, but better than either (and gluten-free). Last, in Oaxaca we learned to transform plain hot chocolate into a more nuanced treat that relies on almonds, not dairy, to add body to a base of chocolate, water and cinnamon.

Join us in this hands-on class and learn how to make these four desserts and the stories behind them, and experiment with variations to make sure you have a recipe perfect for your table.
