The Feast of the Seven Fishes is a southern Italian tradition that deserves to become your Christmas Eve tradition, too.

In southern Italy, they know how to do Christmas Eve dinner the right way: with an exuberant marathon of dishes that celebrate seafood. It took us a while to wade through the nearly 1,000 recipes in our repertoire that feature fish and shellfish, but with our livestream regulars in mind, we’ve done it—and while we don’t want to brag, we’re feeling pretty proud of our version of the Feast of the Seven Fishes. We’re making super-quick, super-fragrant hot oil-flashed shrimp, a dish that borrows a Hong Kong technique and marries it with any aromatics you choose. We’re going off the beaten path to make an Italian chickpea-and-pasta dish that uses anchovies in our favorite way. You’ll be encouraged to keep it simple as far as octopus is concerned and focus on building a punchy, bright marinade. And we’ll make a warming, simple soup that’s perfect for cold nights and shows off the power of combining fish sauce with high-quality, quick-cooking fish. And for those of you over there counting on your fingers, don’t fret: we’ll give you two additional recipes for seafood-forward small bites to get your party started. The seventh?
