The Benefits of Eating Local & Seasonal Food

This is the first in a series of workshops centered around eating well, eating seasionally, and eating for the health and well being of your body.
Meet Ramon Carrion
Three years ago I had a spontaneous lung collapse on the right side, then 6 months later another on the left - in both cases, the lung collapse did not correct itself and surgery was required. Those was the scariest, most life threatening experiences in my life. What I didn't know was that what happened to my body was also a reflection of my professional life and despite my employer being very supportive I needed to start a different life.
This is where FOOD became my focus!
I started to remember mother’s kitchen where I learned to have a passion for food and a nurturing spirit that brought me joy. With that newly remembered passion, I am now focused on food, including the how, the what, with whom, the when and the why we eat (and cook). Make no mistake, cooking is a big part of food and eating…because you are what you eat and you eat where you are! From this we start to realise the seasons help us to eat and cook just as sourcing our food locally adds to our health in many ways.
