Description

Nuka pickling is a traditional Japanese technique where ingredients are fermented inside a rich, living bed of probiotic-packed rice bran. If you feed and care for a nuka bed, you’ll be rewarded with a long-lived and ever-evolving medium that produces uniquely delicious pickles.

Led by local author Karen Solomon of Asian Pickles and Jam It, Pickle It, Cure It, this workshop will begin with an introduction to nuka pickling, followed by instructions on creating and caring for a nuka bed. We’ll discuss choosing and preparing vegetables for nuka pickling and taste a variety of nuka pickles. Students will leave with their very own nuka bed which we will create together in class!
