Join Raffaele Patrizi, Executive Chef and Owner of Mano Bella Artisan Foods, to explore the art and science behind the magic of fresh pasta! Does pasta always have to have eggs in it? What is the difference between sheeted and extruded pasta? What does "bronze die made" mean?

Chef Raffaele will answer these questions and more as you taste the difference between four distinct flours - semolina (extruded), ravioli (sheeted), rice flour pasta (gluten-free), and whole wheat (alla chitarra). You will learn what makes each one unique or better suited for certain sauces and applications. All pasta is made-from-scratch!

The StrEATs Smarts Sessions are a new addition to the 2023 Charlotte StrEATs Festival, part of Charlotte SHOUT! These intimate seminars give you the opportunity to learn from experts on a variety of culinary subjects. These sessions will take place from April 1-14th and will lead up to the big StrEATs weekend! About the organizer

In partnership with Charlotte SHOUT!, food publication Unpretentious Palate and Carben Events are excited to introduce a new festival celebrating the chefs and neighborhoods that make Charlotte's culinary scene what it is.

Attendees will taste their way through the city's most iconic neighborhoods without leaving Gateway Village in Uptown! The festival will also feature cooking demonstrations, neighborhood vs. neighborhood cook-offs, celebrity chefs, food trucks, live music, art and vendors.
