The Mixer of Choice

Join us at Island Canteen to gain a better understanding of the geographical and historical origins of rum. Sampling, comparing, contrasting varying styles from different places is at the center this experience. Each region processes and raw materials associated with the spirit is different. If a small collection of bitters, foreign bottles and making special cocktails at home describes you then I can assure you that this comparative tasting isn’t just a great time, but will also ramp up your knowledge. Eight round of tastings from youngest to oldest paired with succulent Caribbean fusion tapas with plenty of time to discuss and debate after each flight for your enjoyment.


Rum: Its History and Significance

In 1493 Christopher Columbus picked up cane cuttings from the Canaries while on his second voyage to the Americas and transplanted them to Hispaniola, the island in the Caribbean that is now shared by Haiti and the Dominican Republic.The Caribbean is now the epicenter of world Rum production. Virtually every major island group produces its own distinct Rum style.

Rum was used as cure-all for many of the aches and pains that afflicted those living in the tropics. The British navy adopted a daily ration of a half-pint of 160 proof Rum by the 1730s. This naval-Rum connection introduced Rum to the outside world and by the late 17th century a thriving export trade developed.


Food & Spirits

CUBA

Cuba produces light-bodied, crisp, clean Rums from column stills. It is currently illegal to ship Cuban Rums into the United States.

VIZCAYA is a rum made in the Cuban style by a family that produced rum in Cuba since 1820. Their present distillery is located in the Dominican Republic.

HAITI

Haiti follows the French tradition of heavier Rums that are double-distilled in pot stills and aged in oak casks for three or more years to produce full-flavored, exceptionally smooth- tasting Rums. Haiti also still has an extensive underground moonshine industry that supplies the voodoo religious ritual trade.

Rhum Barbancourt is a distinctively unique rum, pot-stilled from fresh sugar cane juice and aged in oak casks in a method similar to the finest cognacs. A true sipping rum of unsurpassed quality

JAMAICA

Jamaica is well known for its rich, aromatic Rums, most of which are produced in pot stills. Jamaica has official classifications of Rum, ranging from light to very full-flavored. Jamaican Rums are extensively used for blending.

Since 1879 the name "Myer's" has been recognized as the world's finest, full-bodied rum. Produced in Jamaica, Myer's rum continues to be distilled in the traditional pot still method and allowed to mature in white oak barrels. It is the final aging period that plays a critical role in determining the distinctive dark color and rich buttery flavor that is synonymous with Myer's.

BARBADOS

Barbados produces light, sweetish Rums from both pot and column stills. Rum distillation began here and the Mount Gay Distillery, dating from 1663, is probably the oldest operating Rum producer in the world.

Dos Maderas is first aged in oak casks for five years in the Caribbean (Guyana and Barbados) and then sailed across to Spain for an additional three years of aging in casks that once held the internationally acclaimed 'Dos Cortados' 20-years-old Palo Cortado sherry. Dos Maderas Rum PX then undergoes a third and final aging step when the rum rests for two years in casks that previously held Don Guido, a 20 year aged Pedro Ximenez sherry.

"Rich with aromas of fig and raisin. Balanced palate accented with ripe fruit and tropical soice over a smoky oak and tobacco finish, laved with hints of Sherry.
