Event description

Description

Become a seasoned spice blender and cook under the guidance of Lior Lev Sercarz of New York's La Boîte. In this master class, Lior will lead you through the hands-on and immersive experience of creating your own spice blend. We'll experiment with ingredients familiar and strange: cumin, cinnamon, dehydrated citrus peels, dried flowers, salts and more. You will also participate in comparative tastings of different species of the same spice. Cumin is not the same the world over.

You will then use your signature blend to customize a full meal including green salad, one pan crispy chicken with vegetables, and spiced labneh with olive oil. We'll end with a tasting of two differently spiced versions of Lior's banana bread.

Students will receive a copy of Lior’s new book, “The Spice Companion,” and their custom blend to take home.

About Lior:

LIOR LEV SERCARZ is the chef and owner of La Boîte, a spice shop in New York City. He attended the Institut Paul Bocuse in Lyon, France, and trained with Chef Olivier Roellinger in Cancale, France, before working as a sous chef at Daniel. His spices are sold online and in the following boutiques: Sofra Bakery and Cafe, Dickson’s Farmstand Meats, ABC Carpet & Home, and Eataly NYC. He lives in New York City with his wife and their children.

About The Spice Companion

Since founding his spice shop in 2006, Lior Lev Sercarz has become the go-to source for fresh and unusual spices as well as small-batch custom blends for renowned chefs around the world. The Spice Companion communicates his expertise in a way that will change how readers cook, inspiring them to try bold new flavor combinations and make custom spice blends. For each of the 102 curated spices, Lev Sercarz provides the history and origin, information on where to buy and how to store it, five traditional cuisine pairings, three quick suggestions for use (such as adding cardamom to flavor chicken broth), and a unique spice blend recipe to highlight it in the kitchen. Sumptuous photography and botanical illustrations of each spice make this must-have resource as beautiful as it is informative.
