Pair the dazzling views with a rare and extraordinary culinary experience and you may wonder if you're living in a dream.
About Spaghetti Western Co.
The food created by Chef Nic Maraziti is produce-forward and features a special blend of Italian roots, frontier upbringing, and love for fire suffused with a new school style. Nic has spent his culinary career with a focus on sourcing and cultivating quality ingredients from our region. Whether that is organic produce, sustainable fisheries, foraged items, or proper treatment of livestock–quality and community are forefront in those offerings.
After years of honing his culinary skills in Portland while working in kitchens such as Ava Genes, Bar Casa Vale, and Tournant, he has brought his skillset to Central Oregon. Nic is currently leading the culinary team at Rainshadow Organics to help bring the dialogue of intentional sourcing to the forefront. We want our dining experience to provide a time to slow down, savor the moment, and connect with those around you.
What will we be eating?!
A six course meal showcasing freshly caught Pacific Northwest fish and organic vegetables & pork grown by Rainshadow Organics.

A note from The Griffin House
Our intention is to create an ephemeral and fleeting experience -- a joyous celebration of food, wine and human connection. The dinner will take place on the Eastern Lawn with remarkable views of the Gorge as our backdrop, however we encourage you to roam the property and take in the views before dinner begins.
This is our first ticketed dinner and we do expect to sell out, so we urge you to get your tickets ASAP if you wish to experience this magical event!
