Join guest chef Luisa Weiss, author of the celebrated “Classic German Baking,” for a class where you’ll learn how to make a perfect-for-summer treat that also happens to be excellent with fresh or frozen blueberries, quartered plums or sugared rhubarb. Unlike some streusel cakes, which require a yeasted batter, this one is made with a simple, quick cake batter that comes out richer and sweeter than its yeasted cousins. The decadent crumb is the perfect foundation for tart fruits, and we’ll use a lot of them: by weight, this cake is much more fruit than flour. Luisa will show you her technique to use every part of your can of sour cherries from fruit to syrup and will share tips on how to work with your fresh fruit of choice, too. Plus, we’ll cover baking fundamentals, like why it’s important to properly cream butter and sugar, the science of baking powder and the reason so many bakers have a love-hate relationship with gluten. About Luisa: Luisa Weiss is a Berlin-born, American-Italian food writer. She is the creator of the blog The Wednesday Chef and author of the lauded memoir, “My Berlin Kitchen.” Her cookbook “Classic German Baking” was named one of the best baking books of 2016 by both The New York Times and The Washington Post. Her work has been featured on Cup of Jo, Design*Sponge and National Public Radio, and in Food & Wine, The Wall Street Journal, The Boston Globe, and Harper's Bazaar Germany, among many others. She was also featured on a recent episode of Milk Street Radio. Luisa lives in Berlin with her husband and two sons.
