Nothing says Valentine’s Day like fruit and chocolate. But this year, let’s skip the boring old strawberries and chocolate and instead indulge in sweet treats the way the Italians do. Guest chef Maria Capdevielle is back for this workshop—capped at just 25 attendees—where you’ll raise your dessert bar several notches. First, we’ll make a dessert that’s indisputably impressive and shockingly easy: pears poached in wine. Or, to be more specific, porto, a fortified wine with rich flavors of berries and dried fruits. Served with a scoop of ice cream or a dollop of crème fraîche, poached pears are a stunning conclusion to any meal, no matter the occasion. Then, it’s on to Torta Caprese. When you see the word “Caprese,” you might think of a summery salad of tomatoes, mozzarella and basil. But in fact, Caprese simply denotes anything fro Capri, a rugged island famous for its stunning coastlines, picturesque towns—and unbelievably good chocolate cakes. Maria’s Torta Caprese is a dense, rich confection that employs both cocoa powder and bittersweet chocolate to achieve new heights of chocolatey goodness. Plus, it just happens to be gluten-free, instead using almond flour. Why almonds? You’ll learn the history of almonds in southern Italy as we bake together. And if two forms of chocolate isn’t enough for you, Maria will also teach you to make a luscious chocolate sauce to glaze cake, drizzle over ice cream or—let’s be honest—eat straight off a spoon.

About Maria: Maria Teresa Capdevielle is the author of "The Secrets of Baking with Olive Oil," a professional pastry chef and a culinary chef/instructor from Abruzzo (Italy). She graduated from the California Culinary Academy in 2003 and did her internship at the famed Chez Panisse in Berkeley, where she learned about hand-selecting and gently preparing perfect produce. Her local experience includes V-Sattui, The Rose Pistola, The Waterfront, The Market Hall, The Townhouse Grill & Restaurant and. She also teaches classes in the SF Bay Area and consults for small restaurants and wineries and help them develop their dessert menu and train their teams.

Our small-group Workshops are capped at just 25 attendees and are distinct from our livestream Classes. As such, they are NOT included with Insider membership.
