Description

In this class, Chef Jeremy Peckham will share the magic of small plates, tapas, and pupus, all tastefully plated and shared. This style of entertaining is such a fun and satisfying alternative to a traditional menu with courses.

The menu for this class will focus on sustainable seafood sourced from purveyors at Natural Energy Laboratory of Hawaii Authority (NELHA) in Kona, Hawaii. Specifically, we'll explore the following:

Kona Shrimp Coctel:
Kona White Shrimp prepared in a sous vide, chilled, and arranged with avocado and cucumber in a spiced tomato broth and served with tortilla confetti

Oysters on the Half Shell - Flavored Three Ways:
Louisiana garlic butter
Roasted Italian style with spinach, pancetta, and crema
Japanese flavors of ponzu, radish, and tobiko roe

"Torched" Crab Crusted Kona Kampachi Toasts:
Seared Kampachi topped with an Asian crab crust on toasted bread with Chinese black bean sauce and black garlic

In the course of preparing these delightful dishs, Chef Peckham will show class participants how to shuck oysters and de-vein and butterfly the shrimp.


About the Chef:

Chef Jeremy Peckham is a graduate of Kohala High School and the California Culinary Academy in San Francisco. He has honed his skills in hotel, restaurant, casino, catering and retreat operations in Hawaii, California, and Florida. Chef Jeremy resides in North Kohala and currently works as a private chef, caterer, and provides retreat services in Hawaii and abroad.

What's the refund policy?

If you cancel at least 72 hours prior to a class, you will receive a full credit (not a cash refund, but a credit towards another class or for use in The Spoon Shop). After that, you may transfer your registration to someone else (we ask you to notify us in advance if you're doing this). In the rare event that an instructor needs to cancel last minute, students will receive a full refund. We do not otherwise offer cash refunds.

Is my registration fee or ticket transferrable?

You may transfer your registration/ticket to someone else for no fee. Please contact us directly to do that.

Do I need to print my ticket?

No, you do not need to print your ticket.

Is alcohol available/provided?

Due to state liquor laws, we are unable to provide alcohol. But please feel free to BYOB to any of our classes. You can always contact us in advance for suggested pairings or you can check with Kona Wine Market across the street for recommendations.

What if I have dietary restrictions?

Please contact us in advance with any dietary restrictions. The recipes that will be used are developed using common cooking and baking ingredients that may or may not be specified in the menu titles, including various fruits and vegetables, nuts, meats, spices, wheat flours, etc. If you have a food allergy, please check with The Spoon Shop Kona before registering for the class. Adjustments to recipes cannot be made during class. We will share your dietary needs with our teachers and do our best to accommodate your requests. However, the curriculum for some classes cannot be revised in order to provide the best experience for the entire group.
