In this hands-on class, attendees will focus on two kinds of peach preserves, a simple peach jam and pickled peaches! Participants will learn hands-on, how to safely and deliciously put up our Texas peaches to enjoy them year round, including ways to personalize your preserves with flavors and infusions. We'll cover the waterbath canning method of sealing the jars for shelf-storage as well as common safety concerns with food preservation.
We will be working with Central Texas peaches from Floresville. Participants will each take home two jars, a jar of peach jam and a jar of pickled peaches and a recipe/methodology packet. Kate will also discuss other ways of preserving peaches such as peach leather and great, delicious ways to use up your peach preserving scraps!
Light snacks will be served.

Kate Payne is an author and freelance writer, and a frequent consultant for design, decorating, cooking, and crafting publications and sites. She lives in Austin and teaches writing workshops and classes on home food preservation and other food-based instruction both privately and at culinary centers locally and across the country.
