Early Bird: The Lasater Ranch Tour (9am-3pm)
Dale Lasagter, 2002 Slow Food Foundation for Biodiversity award-winning cattle rancher, will host this tour at his magnificent Colorado ranch. Dale will share his knowledge of pasture-based production, holistic ranch management and share insights on what it means to be a multi-generation ranching family. The tour includes a delicious local lunch featuring Dale's meat.

Early Bird: Mile High City Sausage Making and Butchery Tour (830am-230pm)
We'll start with a tour of Continental Sausage, 2013 Good Food award-winning Denver sausage maker. Our second stop will be at Western Daughters Butcher Shoppe where we will learn about what it means to be a whole-animal butcher from owners Kate Kavanaugh and Josh Curtiss. Finally, we will stop at a local Whole Foods Market and enjoy a local lunch followed by a tour of their meat department where we will learn about their in-store butchery process, sourcing practices and labeling program.
