Chef enCounters 2018

Our popular Thompson Seattle Chef enCounters program has returned. We’re hosting a series of small, interactive classes with our talented culinary team on our Chef’s Counter at Scout PNW. Enjoy a lineup of charcuterie making, cake decorating, oyster shucking, and more...

This year we're adding a beverage education component into the mix - each class will be paired with some of our favorite wines or spirits. Learning has never been this tasty.

$60 per person, per class.

Select Sundays at 3pm:

October 7th: Charcuterie + Washington Wine / complete
October 21st: Cake Decorating + Champagne / complete
November 4th: Oyster Shucking + Scotch / complete
November 18th: Chocolate Truffles + Amaro / complete
December 2nd: Gingerbread + Warm Winter Cocktails / complete
December 16th: Charcuterie + Washington Wine / registration closed!
December 30th: Oyster Shucking + Champagne / handful of spots available

Class Descriptions:

Charcuterie + Washington Wine: Thompson Seattle Executive Chef Derek Simcik will walk through the basics of charcuterie making and pairing, complete with education and pairings from Walla Walla's Pepper Bridge Winery and Amavi Cellars.

Cake Decorating + Champagne: Executive Pastry Chef Kate Sigel will give each student their own personal cake on which she will do hands on demonstrations using different icing techniques. Moët & Chandon will provide bubbles for pairings.

Oyster Shucking + Scotch: Our team will do a hands on oyster shucking demonstration with each student getting a ½ dozen oysters. Our friends at Diageo Reserve will be onsite for a scotch education and tasting component - or join us for our second round on December 30th for bubbly from Laurent-Perrier to complement your oysters.

Chocolate Truffles + Amaro: Learn how to create your own sumptuous handmade chocolate truffles with Executive Pastry Chef Kate Sigel. Pair the sweet treats with a craft cocktail master class from Amaro.

Gingerbread + Warm Winter Cocktails: Make some magic with Executive Pastry Chef Kate Sigel . You'll learn her tricks for perfect gingerbread and icing, plus piping techniques to take your holiday cookie game to the next level. Housemade hot cocktails will keep this class nice and cozy.
