Vermonter Jeff Roberts is a man of many talents. A former meteorologist, museum curator, and associate dean of veterinary medicine. Jeff’s passion, above all else, is food. From his seminal book The Atlas of American Cheese to his work with Slow Food, Jeff approaches his careful study of artisan food with unrivaled vigor and a commitment to the future of flavor.

His latest book; Salted & Cured, explores the past and present of American charcuterie, and the makers crafting new traditions of preserving meat. Join Jeff and Artisan Food Manager Rory Stamp in an edible discussion of Salted & Cured. You will taste through a selection of expertly crafted products from the Dedalus Charcuterie Case, alongside meat-friendly wines from our Retail Shop.
