Kick-off the Farmer Veteran Stakeholders Conference with a Texas-style farm-to-table dinner at Josh Eiler's famed Ranger Cattle property!

This paddock-to-plate Texas style early dinner (2pm!) will be a spirited affair. Farmer Veteran Coalition member Josh Eilers welcomes us to his Ranger Cattle ranch in Austin. As one of the leading communities for the Farm-to-Table and Eat Local movements, the people of Austin care about their food and eagerly support local farmers and producers.

Josh's passion only reinforces this, and he is generously donating his property and beef for our dining adventure. The menu features his Homegrown By Heroes certified Wagyu beef and is catered by renowned Chef Drew Curren of ELM Restaurant Group, who is donating the remainder of the food spread. The talented Chef Curren will be serving on Ranger Cattle's firetruck food truck, outfitted with beer taps for adult beverages!

It's going to be a fabulous afternoon... When these two culinary experts team up, it's a love of community meets a talent for food. Their dynamic partnership showcases produce and proteins - always local, always seasonal, and always a superior dining experience.

Many more delicacies will delight your palate, including Oli Olive Leaf Tea produced by Texas-based Lisa Forsyth, another FVC and Homegrown By Heroes certified member. Lisa believes in food being a gateway to new relationships and shares "where food comes from, who produces it, and how has never been more important than today."

Strap on your boots - an education accompanies the dining experience. Ranch tours start the afternoon and offer a glimpse into the Ranger Cattle production world.

TRANSPORTATION: For pre-registered guests, we will provide roundtrip coach shuttle service from the DoubleTree conference hotel. Nearby on-site parking is also available for self-driving guests.

About the Dinner Crew:

Andrew Curren is a graduate of Texas A&M University and a valedictorian graduate of the Culinary Institute of America in New York. He studied culinary arts and traveled to and cooked in Italy, Vietnam and Mexico. Drew is a two-time nominee for Food & Wine's 'People's Best New Chef', competed on 'Top Chef: Texas' and is included in multiple editions of Best Chefs of America.

Josh Eilers founded Ranger Cattle after serving as an Airborne Army Ranger for five years. As a Sargeant and team leader in the U.S. Army's elite First Ranger Battalion, he honed his leadership techniques by guiding his team of Rangers on hundreds of special operation missions throughout Iraq and Afghanistan. After being wounded in combat, Josh received a Purple Heart. Today Ranger Cattle is an innovative farm-to-table operation that specializes in breeding, raising, and direct marketing of the highest-quality Wagyu beef to local restaurants and farmers markets, all under the 'Homegrown By Heroes' designation.

Lisa Forsyth served in the US Army for 33 years as an enlisted Soldier and as a senior officer, retiring at the rank of Colonel. Her public health career always involved food and she often reflects on vivid memories of experiencing different countries, cultures, and interacting with people. Interested in agriculture of every country she visits and how it impacts daily life, she now lives and works with her family and beloved dogs on their Diablo Day Ranch, just minutes from the heart of downtown San Antonio.
