Description

"With my high school diploma in Economics in my pocket, I had only one idea in my head -- to work with my hands. I began my pastry apprenticeship in Nancy and for five years trained in well known patisseries such as Streff, Derelle, and Withier.

During these years I participated in numerous stages and made the acquaintance of Stephane Glacier MOF. I soon became a member of the French Pastry team for the WPTC in Phoenix Arizone 00 what a great adventure!

Two years after I became part of the teaching teamwith Stephane Glacier, for demonstrations in France and overseas. He taught me what is good looking and great tasting -- many thanks to you Stephane.

For four years now I teach at the Bellouet Conceil in Paris with a great team -- thanks to you all! I have recently released my first book entitled "First Dessert".

Pastry Arts Academy is excited to offer a 3-day demonstration masterclass of patisserie. Join us to learn how to make magificent travel cakes and entremets.

Program

Ipanema : cake vanille, crème brûlée mangue, chantilly vanille.

Miss Cassis : biscuit fondant amande citron, crémeux plein fruit cassis, douceur mascarpone vanille, glaçage miroir rouge.

Tarte chocolat mandarine : pâte sablée chocolat, croustillant noisette, biscuit chocolat fondant, confit de mandarine, mousse chocolat noir, glaçage miroir rougi.

Tarte tropicale : pâte sablée, crème frangipane, mousse caraïbes, Chantilly vanille, glaçage miroir vert pomme vanille.

Fleur de framboise : fruity almond biscuit, raspberry compote, raspberry and blackcurrant mousse, raspberry chantilly cream.

Edelweiss : Almond genoise, raspberry confit, vanilla and tonka diplomat, white vanilla mirror glaze.

Hémisphère acidulé : Chocolate biscuit, raspberry/blackcurrant and dark chocolate ganache, tangy dark chocolate mousse, red dark chocolate glaze.

Ebène : Salted shortbread, caramel biscuit, soft caramel, caramel chantilly, gourmet glaze.

Signature chocolat : streusel, streusel reconstitué, biscuit joconde chocolat, crémeux chocolat lacté vanille, mousse chocolat allégée 70%, meringue de base, glaçage miroir noir brillant.

Tokyo : biscuit éponge, crème yuzu, mousse caramel, glaçage miroir jaune.

Le bourbon exotique : biscuit madeleine, compotée exotique, mousse vanille allégée, meringue décor, glaçage miroir blanc.

What to Wear

All students are required to wear a chef’s jacket, long black or khaki pants, and kitchen-safe shoes (closed-toe, non-skid, no lace-ups).

What will be Provided

All tools, equipment, and ingredients will be provided. Students will receive a full recipe book. Students will receive a certificate upon completion of the class. Lunches are included in the price of the class.

TERMS AND CONDITIONS:

Full payment is required at registration to secure your place in the class. Unless paying by cash or credit card, registration will not be confirmed until payment clears. This is applicable for checks, money orders, and other payment methods.

Attendees of the previous classes organized by Pastry Arts Academy qualify for 5% discount on any additional class taken the same year. Please contact PAA to get a this discount.

Cancellation Policy:

A full refund (less a $30 administration fee) will be issued up to 30 days prior to the class start date. No refunds will be issued for cancellations less than 30 days prior to class start. If you choose, you can exchange your refund amount (less the $30 administration fee) for a credit that can be applied to the cost of another class within one year of cancellation. You must call or email if you choose to receive a credit. If the credit does not fully cover the cost of the new class, the student will be responsible for paying the difference.
