Slippery, earthy and cold soba noodles swirrled in a sweet and salty dipping sauce. Juicy charred corn and cooled macaroni tossed in a creamy cilantro-studded sauce and topped with crumbled cotija cheese. Cold summer noodles dishes are perfect summer eating: they’re substantial enough to fill you up but light enough to still making eating enjoyable on hot nights. When made right, they’re also fun to eat, bursting with different flavors and textures. This class will teach you how to make them right. Milk Street’s Matt Card and April Dodd will show you how to make two wildly different but equally successful noodle dishes and explain why they work so you can apply their lessons far beyond the two recipes in class. First you’ll make the simple, subdued but umami-rich quintessential Japanese noodle dish or chilled soba, a favorite on hot, humid summer days. The classic version, called zaru soba, is a minimalist pairing of just noodles and a dipping sauce. In our version, however, we include a few colorful garnishes to round out the meal. Next, we turn to Mexico’s famous esquites, corn that typically is grilled or roasted. We take those smokey kernals and turn them into a creamy-rich yet bright and fresh pasta salad that is a mixture of herbs, lime, chili and cheese. As you make both salads, you’ll learn about flavoring pasta cooking water, when not to save your pasta water (and why), and how to balance lightness and heft to make enjoyable summer meals.

After class, you will receive a recording of the event, as well as a folder of recipes and resources that we discuss during the event. Class recordings are available to all registered attendees for two weeks following each event.
