Description

On October 24, 2017, join us for Omakase Night with Chef Matt Rojas, a 9-course dinner with Sake pairings included! Long before Chef Rojas opened up Char Sue, he apprenticed under living legend Nobuo Fukuda, Executive Chef of Nobuo at Teeter House in Phoenix and subject of the critically acclaimed documentary “Kakehashi.” Under Chef Fukuda, Chef Rojas honed his skills in Japanese cuisine and learned what it took to run a kitchen. It was actually Chef Fukuda who convinced Matt to move to New York City so he could further his craft in the culinary capital of the world!

This intimate yet casual event will have two seatings of 12 at 6:30PM and 8:30PM. Also on hand will be Sake Specialist Ryan Mellinger from Joto Sake, who will be your guide and captain. About Chef Matt Rojas

Chef and “Char Sue” restaurant co-owner Matt Rojas is a veteran of 11 Madison, Degustation, Nobuo at Teeter House and was formerly the Executive Chef of Rouge et Blanc. Matty grew up in Arizona, where he first learned to cook from his mother and grandmother. He later trained under Nobuo Fukuda, Daniel Humm, Wesley Genovart and Susur Lee.

Ryan Mellinger is a Sake Specialist and Sales Manager for Joto Sake. Based in NY, Ryan is proud to share Joto Sake with her hometown, but also travels extensively throughout the Northeast and North Central U.S. educating and working with talented restauranteurs, chefs and sommeliers. Joto is the lead importer of artisanal Japanese sake in the U.S. Joto is Japanese for “highest level” and describes their multi-generational, family-owned sake breweries. Hailing from a range of regions in Japan, Joto Sakes each have rich histories that make them both versatile pairings at your next dinner, and also great conversation.
