Vegetables are the centerpiece of most cuisines around the world, and Milk Street brings you a new approach to making vegetables bright and flavorful—the star of any meal. This winter's menu is inspired by the Mediterranean and includes cracked potatoes with vermouth, fennel and coriander, Middle Eastern roasted cauliflower with tahini and dukkah, kale salad with smoked almonds and Spanish-inspired breadcrumbs, and charred eggplant with Persian sweet and sour mint dressing.
This is a three-hour hands-on cooking class led by Milk Street Cooking School educators. Please note: some of the recipes in the class may use fish sauce or anchovies. If you are a vegetarian, please let us know.
