What's the secret to soups that are cozy and warming without being over-the-top heavy and wintry? Herbs.

About this Event

Too often, the transition from summertime to cold-weather cooking is all too extreme: we jump from caprese salad straight to hearty, meaty stews. There is a happy medium, though, of dishes that draw on vibrant vegetables but use cold-weather techniques. In this class, we’ll focus on warming soups that highlight big quantities of fresh herbs. First, you’ll learn to make Sardinian S’erbuzzu, which traditionally has 17 (or more!) herbs and greens, though we’ll use just three: parsley, tarragon and arugula. We’ll explore how to perfectly balance its bold quantities of herbs with satisfying ingredients like pancetta, fregola (a pea-like Sardinian pasta) and ricotta salata cheese, meaning this can truly be a one-dish dinner. Then, we’ll make Chickpea and Yogurt Soup, where big handfuls of dill and parsley perfectly complement creamy chickpeas. The unexpected addition of yogurt gives this soup body and creaminess despite its brief 30-minute cooktime. Join us to learn a new set of techniques to give substance to light soups and lend brightness to heavy ones.
