Collaboration 6 course tasting Dinner between chef Bret Thompson of Pez Cantina & chef Gilberto Cetina of Chichen Itza & Holbox with Valle de Guadalupe wine pairing.
Former Patina executive chef Bret Thompson's dishes are inspired by his travels to Loreto, a sleepy fishing town in Baja California, Mexico, and his marriage into a Mexican family, Bret captures the complexity and spirit of the food he has developed a strong love and passion for. Pez Cantina’s menu focuses on dishes from the many distinct regions of Mexico: from Baja, to Oaxaca, to the Yucatan Peninsula.
The 38 year old Mexican born chef Gilberto Cetina draws his inspiration from the traditional flavors of Mexico with a clear inclination towards the southern states, in particular the Yucatan Peninsula where he was born and where he developed his passion for seafood. His dishes are a contemporary take on classical Mexican Mariscos from all regions of his country of origin.
