Learn how to make your own raw vinegar in this exciting workshop! If you're ever tasted an artisanal vinegar, you realize that what you buy at the supermarket are really cheap and insipid imitations of the real thing. In fact the vast majority of commercial vinegars are made in a few days and pasteurized, gone are the good bacteria and also the delicious complex depth of flavor that you'll find in homemade vinegars.

The process is super simple, a bit similar to making Kombucha. By learning to make your own, you open the door to endless creative culinary possibilities from salad dressing, sauces, gourmet condiments and even medicinal uses.

In this unique workshop you will learn

How to collect vinegar bacteria from nature
Making a homemade vinegar using a starter
How to make gourmet vinegars from wines, beers, meads and other alcoholic concoctions
Infusing with herbs, barks, aromatic wood, berries and spices
Exploring medicinal properties
Seasoning and blending vinegars including how to make a healthier basalmic vinegar substitute than what's available at the supermarket.
Creative culinary uses - shrubs and condiments.

Each attendant will be provided with a starter jar containing a "mother" vinegar which can be used to start your own exploration in creating homemade gourmet vinegars.

At the beginning of the workshop we will do a short plant identification walk and talk about the culinary and medicinal properties of the plants we encounter. After the walk, we’ll enjoy some delicious natural drinks and wildcrafted snacks (some using my homemade vinegars from wild beers and wines).

Long pants and hiking shoes are preferred (not a must). We have some poison oak in the area. Make sure to bring some water and sun protection too.

Look for a red Jeep Wrangler near the entrance, we park on the side of the road a bit further (Don't enter the main gate, just drive a bit further)

Note that in case of rain (I wish!!! - we need it), the workshop may be held indoor at a separate location, in such a case you will be notified by email a few days before the workshop's date.
