Join the NYMetro Region of the Research Chefs Association as we host a “Lunch and Learn”-style event at Jersey Spirits & Distilling in Fairfield, New Jerse. During this lunch and learn, attendees will listen to several presentations from leading experts in their fields. Each presentation is designed to teach attendees about new innovations in the marketplace and how to use the combination of food science and culinary arts to further advance their own signature products. See below for agenda and descriptions of our presentations.

Lunch will be an assortment of salads, sandwiches, assorted beverages, snacks and desserts.

A Pickle: Invigorating in an Age Old Category - Chef Posner will take guests through a journey of how the pickle evolved into what its become today, including different methods of pickling, fermentation and heat processing. Chef will also discuss how modern manufacturers are taking this age old category and making the puickling process and end-product more appealing to today's market.

The Future is Here: How AeroFarms is Transforming Agriculture in Cities All Over the World - This presentation will present a broad overview of the current challenges facing the agriculture sector, and will focus on how AeroFarms patented indoor urban farming technology was developed to address the issues facing our global food system today. Attendees will learn about AeroFarms technology and how their plans for the future of vertical farming has far-reaching implications.

Food Formulating with Wine & Spirits - Join Dave as he takes attendees through the latest food trends in food manufacturing and casual dining. The presentation will lead into wine and spirit production, varietals and spirits that are commonly used in processing, and great applications when cooking or developing with alcohol.

The Art of Distillation - Join Master Distiller, John Granata as he enlightens our guests on Jersey Spirits Distilling uniqe craft of making their varieties. Each batch produced at Jersey Spirits is handcrafted and they have a wide variety unique processes and recipes that they take pride in and enjoy sharing with their guests.
