Description

No doubt the bread culture of the United States have been steadily improving, with some amazing bakeries appearing in many cities around the country. Still, the bread artisans are looking for more knowledge to improve their skills. Pastry Arts Academy is happy to present a baker whose knowledge of bread is astonishing. Join us for 5-day hands-on masterclass with an amazing Master Baker Ludovic Richard, MOF. Here is his short biographical intro.

"I am of Breton origin and the son of a village baker. I began my career as a pastry apprentice and then concentrated on bakery. After gaining my Certificate of Professional Competence (CAP) in bakery, I earned my Masters Certificate in Vannes . I have been teaching bakery now for 20 years at a technical school in central Brittany.

At the age of 26 I entered my first competition. In 1997 I came first in the European Cup competition , second in the 1999 World Cup and I won the prestigious ‘Best Tradesman in France’ title in 2000.

As a tradesman of experience , I am happy to teach my trade in France and in numerous countries around the world in the role of ‘Technical Advisor ‘ to bakeries, pastry shops and restaurants.

In 2009 I embarked upon a new personal and professional venture in the Land of the Rising Sun. Together with a Japanese partner ‘Boulangerie Pompadour’ we opened a first Boulangerie à la Francaise in Tokyo in April 2012. A second shop was opened in Tokyo in 2013 in the famous district of Shibuya."

What to Wear

All students are required to wear a chef’s jacket, long black or khaki pants, and kitchen-safe shoes (closed-toe, non-skid, no lace-ups).

What will be Provided

All tools, equipment, and ingredients will be provided. Students will receive a full recipe book. Students will receive a certificate upon completion of the class. Lunches are included in the price of the class.

TERMS AND CONDITIONS:

Full payment is required at registration to secure your place in the class. Unless paying by cash or credit card, registration will not be confirmed until payment clears. This is applicable for checks, money orders, and other payment methods.

Cancellation Policy:

A full refund will be issued up to 30 days prior to the class start date. No refunds will be issued for cancellations less than 30 days prior to class start. If you choose, you can exchange your refund amount for a credit that can be applied to the cost of another class within one year of cancellation. You must call or email if you choose to receive a credit. If the credit does not fully cover the cost of the new class, the student will be responsible for paying the difference.
