Join us for a unique honey tasting from the experts at The Roof Crop! Dive into the world of urban beekeeping with the Managing Partner of the Hive, Naaman Gambill, and The Roof Crop! We will taste honeys from 5 hives across Chicago and learn about the path and activities of their bees - including what contributes to their unique flavors. Join us to enjoy a “honey” focused cocktail from Spice Note Tequila, a honey tasting, and to learn about the hives the Roof Crop keeps on roofs just above our heads all over Chicago! This is a hands-on tasting experience for curious cooks and gardeners looking to learn from local experts who have tremendous experience raising bees for chefs and honey-lovers all over Chicagoland!

About The Roof Crop: Established and Women-Owned since 2015, The Roof Crop grows and sells hyper-local, naturally nutrient-dense food and flowers, fosters ecosystems for natural pollinators and honey bees, maintains hives and creates custom urban sustainability programs for chefs, brewmasters, mixologists, flower boutiques, foodies and a growing network of building communities. Together we aim to create greater access to sustainable, local food, pesticide free flowers and hand crafted wellness products. We believe that urban agriculture is vital to our growing cities and the health of our communities.

About Tracy: Now based in Chicago, Tracy Boychuk is the Creative Director and Founder of The Roof Crop, Urban Aggregate and Runner Collective and a managing partner in Hospitality 201. Originally from Canada, Tracy has taken the deep respect for growing food from her farm-raised father and adapted it to growing everything from strawberries to tomatoes on roofs in Chicago. The systems are open-air and strive to use everything grown from weed to flower. Most food is sold to Chicago’s most remarkable chefs, some is used for tenant programming and engagement and through the Urban Aggregate project is now finding its way into communities in need. A frequent guest speaker at the Raby Integrative Medical clinic on plants and food as detoxifiers and interesting edible herbs and flowers, Tracy will share her experiences using her own farms and gardens in various products and with methods for saving and using. Through The Roof Crop and Urban Aggregate, Tracy strives to create landscapes that feed not only body but mind and soul.

About Naaman: Managing Partner of the Hive: Chicago's Beekeeping Supply Store, Naaman Gambill has been beekeeping in Chicago for several years. Prior to establishing Chicago's first fully devoted beekeeping store he served as Westside Bee Boyz LLC's Head Beekeeper, and prior to that, he served as Garfield Park Conservatory Alliance's Head Beekeeper and Greening Programs Coordinator. His experience as a teacher and relationships to the beekeeping community led him to opening the store to assist beekeepers in the Chicagoland area.
