The Live Oak Grange is pleased to have Eriko Yokoyama-Gilman and Masumi Diaz share their knowledge of miso making with us. They will share their excellent koji culture and offer many tips and suggestions from their many years of experience.

In this comprehensive hands on class, each participant will go home with 2 pounds of organic miso mixture in a glass crock to ferment in their own kitchen. Because it is a several day process, the beans will be prepared in advance so we can start the miso during the class. Every step in the process will be explained and demonstrated.

Miso is a delicious, high-protein seasoning that has been used everyday in the Japanese kitchen for 1300 years. Miso’s fermentation process restores beneficial probiotics that help break down the amino acids in soybeans and make other foods easier to digest. In this class you’ll learn how to make organic miso and explore the many different ways that miso is used.
