una cucina mediterranea e genuina


Treat yourself to an authentic cooking workshop celebrating the beautiful Puglia, a region centered around native culinary traditions and simplicity.

In the culinary world, Puglia is known for cucina povera (translated literally as poor kitchen). Like in other regions of southern Italy, families had to learn to utilize the available ingredients, which are simple, yet high quality. Recipes and techniques evolved from necessity, from having to shop, cook and prepare healthy and nutritious meals daily from what was available and convenient. Nothing was wasted! These practices continue today. Local, seasonal and farm-to-table aren’t just trendy catchphrases in Puglia. They are a way of life. Fresh and flavorful local fruits and vegetables are abundant and form the basis of much of the cucina pugliese.

We are pleased to welcome back Patrizia Greco, who will take us through an exploration of a traditional pranzo pugliese.
Students will learn how to make an authentic pugliese menu, including handmade orecchiette and focaccia.

After cooking together, we will sit at an elegant table and enjoy our pranzo, dall’antipasto al dolce, with paired wines.

Level: All levels welcome. This workshop will be conducted in Italian with very little English spoken.

La Puglia è la regione italiana più orientale, ed è stata come tutte le regioni del sud dimora e custode di popoli che sono approdati nelle sue coste bagnate dai due mari: lo Ionio e l'Adriatico.

Nel corso dei secoli ogni popolo ha lasciato la propria identità costruendo una terra colma di storia e di arte. La natura, generosa, ha disegnato questa terra con uliveti centenari e ricamato le sue colline con filari di famosi vigneti avendo il sole come unico motore.

Tra il mare e la terra nasce la cucina pugliese, una cucina 'povera' nel senso nobile del termine, una cucina votata all'amore per la terra e l' amore per il mare, dove mani contadine creano, su tradizioni antiche, piatti che per la loro semplicità di esecuzione sono diventate delle eccellenze italiane. Ogni piatto, come un rituale, si veste di quello che la stagione regala.
