About this Event

The rise in popularity of kombucha, the effervescent and slightly sour fermented tea drink, continues to grow and has found itself on the menus of Barcelona's most awarded bars (Paradiso, Dr Stravinsky and Marlowe to name a few).

During this masterclass you will learn the necessary skills to make, manipulate and apply this product in a safe and consistent way then taste different and unique flavour profiles.

Unlike other drinks that remain shelf stable - kombucha is alive and can require more attention and care. During this session we will demystify the mechanics behind the processes involved and understand how to control them.

We will cover:

  • The origins and legend of this drink and why it has become so popular
  • An introduction to different tea types and how your choice of tea will affect your end product
  • Safe preparation and storage in a commercial environment
  • The right time to harvest your kombucha and what signs to look out for
  • Who is doing what with kombucha around the world from food pairings, glazes, cocktails and more
