Ketofest 2018 is a festival promoting ketogenic food and wine, cooking, social activities, and talks by doctors and scientists.

Imagine spending a weekend with hundreds of other low-carbers in a coastal New England town turned keto! Within four blocks, you will interact with world-class speakers, patronize local restaurants serving real keto dishes, attend a pig roast where you don't have to worry about sugar in the sauce, learn how to cook your own keto dishes, attend talks on various keto-related topics, take fat-adapted fitness classes, and network with other ketogenic warriors.

Ketofest is not a conference - it's a festival! Conferences are for professionals; festivals are for people! Ketofest is for real people who want to learn the science behind, and practical applications of, the ketogenic lifestyle as a food-based remedy for numerous "diseases of civilization."

No company owns keto. There are no required products. There is just food and knowledge.

Attend talks by world-class authors, journalists, and scientists! This year, we will have twice as many speakers and two venues! Confirmed speakers: Nina Teicholz, Ivor Cummins, Dr. Eric Westman, Dave Feldman, and plenty more ... including Jimmy Moore.

On Friday, Megan Ramos from IDM (Intensive Dietary Management) and the Obesity Code Podcast will host "Fasting Friday," a free event where she shares the latest clinical data from IDM patients, and recent science on fasting.

Social Saturday

On Social Saturday (July 21), we're having an outdoor party on the Parade Plaza in New London, right on the water across the street from the train station.

Not only will we have a pig roast (smoking overnight), we'll also be serving grilled sausages and other meats, and this year everyone gets Carl's keto clam "chowda!" Also, there will be a great live band, just like last year.

Of course, we'll have plenty of water and coffee available (and Zevia has donated 8 cases of their soda), but no alcohol will be served at our party. There are plenty of drinking establishments within walking distance from the Parade serving keto cocktails! Thames River Wine and Spirits, located across the street from the Parade, will be hosting wine and cheese tastings all day. Now, that's a party!

Sign up for walking tours and Segway tours of historic New London (tickets sold separately). Fitness coach Allan Misner will be offering fitness lessons.

RD86 Space (formerly the Spark Makerspace) has a professional kitchen where you can watch instructional keto cooking lessons and sample the results.

This year, we've built out a brand new production kitchen at RD86, which means we can serve everyone samples from every keto chef demonstration!

We've teamed up with several restaurants within walking distance of the Parade to provide at least one ketogenic dish on their menu. These dishes will be highlighted in the printed program along with a map of the restaurants, phone numbers, and whether they require reservations. Most do not.

Saturday night there will be an ice cream social at RD86 featuring low-carb ice cream from Keto & Co and Rebel.

Science Sunday

Our fabulous sessions start at 8 AM and go until 5 PM. You'll learn the latest research, science, and stories from the field. This year, we have two venues: The Garde Arts Center and the Crocker House Ballroom.

The all-day bacon bar starts at 10 AM! At 11 AM, Fox Hill Kitchens starts serving grilled cheese sandwiches on their amazing low-carb bread.

At noon, the main dish (to be determined) will be served. For drinks, we'll be serving coffee, tea, water, and the Ketofest Cocktail (seltzer, apple cider vinegar, citrus bitters, and a drop of stevia).

POST-KETOFEST COOKING CLASSES

Immediately following Ketofest, Chef Taffy Elrod is going to teach two hands-on keto cooking classes, a basic class and an intermediate class. See the available tickets for dates and times. Recipes subject to change.



CULINARY AND KETO 101

Blinis with American Caviar and Crème Fraiche
So many traditional foods elevated culinary classics are already keto friendly. What could be more so than salted fish eggs and cultured cream? All you have to do is base the classic buckwheat pancake on eggs instead of grains and this culinary institution becomes a low carb-high fat dream come true.

Pan-Seared Duck Breast with Black Berries and sautéed Wild Mushrooms
Duck is prized for its generous layer of fat and crisp skin. But to attain the desired crisp skin and tender flesh you need the proper technique. We will complete it with a beautiful pan sauce and accompany it with classic pairing of black berries which help to balance the richness of the duck and wild mushrooms which enhance and match its depth of flavor.

Spiced Panna Cotta with Caramel Sauce
Panna Cotta is gelatin elevated, combined with cream and spices the result is simultaneously simple and sophisticated, rich yet refined. It is extra decadent when paired with a sugar free caramel sauce.




CULINARY AND KETO INTERMEDIATE

Seared Fois Gras and Scallops with a salad of seasonal greens and Champagne Vinaigrette
The ultimate culinary fat with fresh garden greens balanced with a sharp vinaigrette.

Braised Breast of Veal and Risotto Milanese with Gremolata
Braising is one of my favorite techniques. Breast of veal offers plenty of silky gelatin and cooks more quickly than more common proteins like shanks or short ribs. Braised with pancetta, white mirepoix and fresh rosemary, as the veal cooks it creates its own velvety sauce.

Risotto Milanese is a classic dish enriched with butter and bone marrow and scented with saffron. By making it with cauliflower we will maintain and enhance all the keto friendly aspects of the classic while making it low in carbs.

Chocolate-Espresso Torte with Zabaglione
A rich and decadent bitter sweet torte paired with a light custard based sauce made with a dry wine instead of the usual sweet dessert wine.
