Johnson & Wales University International Symposium on Bread promises to rise even higher with a hands-on approach, but far fewer tickets will be available, so don’t delay!


The first two International Symposiums on Bread, or “On The Rise,” set a high bar, with celebrated industry leaders exploring issues and opportunities that attracted attendees from five continents. This year, that bar will be raised even higher; the third annual JWU International Symposium on Bread, presented by Puratos, will offer a smaller group of attendees the chance to explore these themes more deeply, through small, hands-on workshops.

This year’s attendees are invited to focus on an area of interest from one of three workshop tracks. Each of these tracks will be led by an internationally recognized team of bakers, millers, and educators. This year’s workshop tracks include:

The Future of Bread Lies in Its Past: New Frontiers in Sourdough Microbiology: This group will create original naturally-leavened sourdough breads using a number of different starters from around the world. Flavor profiles will be compared and correlated to the wild yeast and bacteria identified with each starter, with the goal of providing guidance to the baking community based on the group’s findings.

Local, Ancient, and Heirloom Grains: The Farmer/Miller/Baker Connection in Baking with Landrace, Heirloom, Regionally Specific, and Polycrop Grains: This group will create original products using a variety of specialty flours, with a goal of identifying flavor and functional characteristics, as well as providing guidance to baking community as to best use practices and methodologies for working with these grains.

Good Bread is Good for You: Wellness and Healthfulness in the Future of Bread: This group will create original products that utilize sprouted and other specialty flours designed to maximize both digestibility, gut health, and flavor, as well to explore the characteristics that define and distinguish good bread that is also good for you, in order to provide guidance to the baking community for the advancement of the wellness aspect of bread.

In addition to the workshops, there will be a keynote address on new discoveries in the world of microbiology and their implications on the future of bread. Please Note: This year’s symposium will be limited to 60 attendees, 20 in each track. This represents a rare educational opportunity and we expect the event to sell out very quickly! If your workshop track of choice is sold out, you have the option of joining a waiting list, registering for an alternate track, or both. (For this last option, if a spot becomes available in your first-choice workshop, you will be allowed to switch.)
