Learn about the history of pasta in New Orleans and the South from Leonard DeFrancisci, whose great grandfather immigrated to the United States in 1905 and built his first pasta machine in 1914 under the name I. DeFrancisi & Son. Under its current name of DEMACO, the company remains the only industrial pasta machine manufacturer of its kind. Mr. DeFrancisci will explain the evolution of the creation of pasta in the US, with a special focus on the city of New Orleans.
