Description

This class will cover the production of lactic-style bloomy rind cheeses in the style of Brie, Robiola, and Camembert. Gail Hobbs-Page, owner and cheesemaker of Caromont Farm, will cover topics including milk chemistry, acid development in lactic style cheeses, documentation of the make, and hooping and salting of small format cheeses. Students will learn about and make various bacterial washes to spray on cheeses in order to produce different styles of bloomy rinds. Afterwards, the class will partake in a sensory analysis of various rind development concepts and a tasting of the bloomy rind cheeses made that day.
