Join Open Kitchen for this unique opportunity to experience cooking and dining in a commercial kitchen and learning about different cuts of meat, butchering techniques for home use and various knife skills. Dr. Field Goods Restaurant and Butcher Shop is an award-winning local Santa Fe treasure. Don’t miss this event, space is limited.

Description

Vietnam is divided into three primary regions: Northern, Central and the Southern. Its long, slender and unique geography plays an important role in its cuisine because of how the climate affects the availability of certain food and spices within each region. Whether you chose our hands-on cooking class or to dine with us, you will travel from northern Vietnam, through its central belly and down to its southern tail, to get a taste of varying styles and approaches to food and its preparation as well as the different ingredients being used.

Open Kitchen is committed to sourcing as many ingredients locally and from local partners as feasible…from Dr. Field Goods Butcher Shop, Above Sea Level, the Santa Fe Farmer’s Market, and others.

A Taste of Northern Vietnamese Cuisine: Flavor of Thousands of Years

1st: Bánh Tôm Hồ Tây ~ Sweet potato and shrimp fritters with herbs and Vietnamese dipping sauce (df)

A Taste of Central Vietnamese Cuisine: Spicier, More Complex Flavors

2nd: Bún Bò Huế ~ A famous spicy beef and pork noodle soup from Huế with rich and robust ingredients such lemongrass and shrimp paste (gf, df)

A Taste of Southern Vietnamese Cuisine: Sweeter, More Vibrant Flavors

3rd: Gỏi Mực Hoa Chuối ~ Banana blossom and calamari salad with Vietnamese lime vinaigrette, fresh herbs, crispy shallots, shrimp crackers (gf, df).

4th: Chè Trôi Nước – Sticky rice mochi filled with mung bean and bathed in a sweet ginger sauce, served warm and topped with rich coconut milk reduction and toasted sesame. (vg, gf, df)
