This Culinary Program is a two-part class.
On January 28th, 2023, the class is a lecture and tasting. On February 4th, 2023, the class will be a hands-on cooking class. Please note that this ticket serves for both parts of the class.
PART 1 (January 28, 2023): Platica y Prueba: Indigenous Veganism: Remembering Mesoamerican Foodways, Food Principles, and Seasonal Diets
This Platica (Lecture and Tasting) provides a brief historical account of Mesoamerican foodways, the dietary changes resulting of the colonial encounter, and the Indigenous erasure and appropriation of those foodways, while providing a decolonial and an Indigenous ecofeminist critique towards remembering the value and importance of eating a local, ecological, seasonal, sustainable, organic, and native-based diet.
PART 2 (February 4, 2023): Hecho con Amor: Indigenous Veganism: Indigenizing Your Diet with Mesoamerican Foods
This cooking class will provide quick, simple, and effective ways to integrate Indigenous plant-based foods into the making of cultural heritage and nutrient-dense comitas (foods) for those on the go!
The dishes that will be made include:
- Cashew Cream
- Corn Milk Chia Pudding
- Cream of Quinoa
- Indigenous Protien Powders
Guest Chef: Professor Claudia Serrato, Ph.D, Indigenous Culinary Anthropologist; Chef and Co-Founder of "Across Our Kitchen Tables."

Dress Code Policy
For the safety of all attendees, LA Plaza Cocina asks that all attendees abide by the following guidelines of our Dress Code Policy to make our space safe for you, our staff members, and guest chefs:
- Please wear comfortable clothing with closed-toe shoes
- Please pull long hair back with a hairband
- Attendees must wear a mask throughout the duration of the program except for eating and/or drinking

COVID-19 Vaccination Policy
Attendees of LA Plaza Cocina's food programs must provide proof of vaccination to attend both the cooking classes and demonstrations. In addition, all attendees must wear a mask throughout the duration of the program except for eating and/or drinking.
For Attendees who are NOT vaccinated, we require a negative COVID-19 test 72 hours prior to attending this event.
