Description

Please join us on Tuesday, October 15 for the IFT Aksarben Fall Meeting at Sage Student Bistro. We will enjoy a five course meal prepared by students attending The Institute for the Culinary Arts at Metropolitan Community College. We will also offer a presentation on trends forecasting given by Suzy Badaracco, president of Culinary Tides, sponsored by the Institute of Food Technologists Section Lecture Series.


Networking: 6:00 - 6:30 pm

Dinner: 6:30 - 7:30pm

1st Amuse Bouche: House cured salami, black garlic aioli, chili oil, pickled onion, micro arugula

2nd course: Beet Salad – Roasted beets, field greens, balsamic, fig, orange, pistachio, honey vinaigrette

3rd course: Cured Salmon – sweet corn cream, tart apple & celery root salad, quinoa, red onion, pickled chili pepper, cilantro, poppy

4th course: Short Rib – bordelaise, Yukon potato puree, peas, Cipollini onion, mushrooms, celery

5th course: Dessert Chef's Choice

4th Course Vegan option – Roasted Butternut squash Risotto, mushrooms, Swiss chard, chili oil

Bio

Suzy Badaracco is a toxicologist, chef, and registered dietitian. She holds a Bachelors of Science degree in Criminalistics, an Associate degree in Culinary Arts, and a Master of Science degree in Human Nutrition. Suzy has worked as a trends forecaster for food industry clients since 1992. Suzy has been trained in military intelligence, chaos theory, and predictive analysis techniques used by both corporate and government bodies and has been practicing trends intelligence and predictive forecasting for more than 20 years. Using these techniques, she has been able to successfully predict and profile government, technology, adversary and ally, food, flavor, consumer, industry, and health trends.
