The Indiana Department of Education is inviting cooks to a hands-on train-the-trainer workshop by Chef Cyndie Story.
This one day training will be held in Indianapolis, IN. Registration will start at 7:30 am. The training begins at 8:00 a.m. and ends at 2:30 p.m. Due to limited space, we only have room for the first 25 registrants and can only allow two cooks per School Corporation. To participate, each cook must register.
The overarching goal is to provide participants with the knowledge and skills needed to provide healthy school meals, including knife skills, culinary techniques for fresh produce fabrication, and utilizing herbs and spices to enhance menu flavor and appeal. Recent changes in the school meal nutritional content will be discussed, such as increasing whole grains and reducing sodium in school meals. Below please find a tentative agenda:
8:00 am Introductions and overview (Food safety rules discussed)
8:30 am Live demonstration
11:00 am Food production (Teams will prepare recipes/use equipment)
1:15 pm Taste test/lunch break
2:00 pm Production kitchen cleanup
2:30 pm Adjourn
