Brooklyn has long been an epicenter of restaurant and bar culture, and that reputation is only expanding. How does the borough's hospitality community push the conversation about good food forward while fulfilling diners' ever-rising expectations?

We bring together Nate Adler of Gertie and Claire Sprouse of Hunky Dory to discuss the journeys of opening up their respective restaurants and their visions for the future of Brooklyn's food scene.

About Gertie – Gertie is named for Nate Adler's Queens-born and -bred grandmother. Adler’s chef and partner, Will Edwards (Reynard, Marlow & Sons, Diner, Roman’s), and fellow native New Yorker cooks updated interpretations of old-school favorites: the patty Reuben, cauliflower melt, and smoked fish salad in the afternoon are served alongside egg creams, whoopie pies and root beer floats.

About Hunky Dory – Claire Sprouse opened Hunky Dory (alongside co-owner Chad Arnholt) in January 2019 in Crown Heights, and adopted a sustainability ethos and "waste not" approach to their offerings. Dishes include everything from a savory-style oatmeal with kabocha squash, to a root sandwich, to cod tots.

About Camp David – Camp David is a membership workspace, comprised of private offices, shared desks, and a ground floor work lounge with a cafe and coffee bar. Based in Sunset Park, Brooklyn, Camp David was created by Milk Studios co-founders, Mazdack Rassi and Erez Shternlicht, as a professional home to creative entrepreneurs, freelancers, and small businesses.
