About this Event

An ongoing challenge in the hotel industry is rising food costs within your Food and Beverage departments. One of the keys to success is food waste prevention, particularly for your buffet and event catering services. Join Togather Restaurant Consulting’s Seth Gruschow to learn strategies to reduce food waste in your kitchen, empower your employees, reduce your environmental impact, and improve your bottom line. Seth has been in the restaurant industry for more than 20 years and brings a diverse array of industry knowledge on waste prevention strategies, restaurant finance, and menu creation. During this interactive workshop he will share his work and help you create a Strategic Action Plan for your hotel kitchen based on industry best practices. About the Instructor

Seth Gruschow started in the restaurant industry at 14 and has had a successful career as an award-winning Executive Chef and Operations Manager for individual and corporate businesses. His career has brought him all over the country, from New York where he overhauled an independent waterfront restaurant with a staff of 115, to overseeing food and beverage operations at the Mammoth Hotel in Yellowstone National Park.

His proven expertise in cost control, labor management, guest services and systems to simplify a restaurant’s daily process has translated into a successful Restaurant Consulting Business, Togather Consulting. Now Seth works with owners and operators to help them reach their full potential in profit, leadership and sustainability. Working to help simplify the process and make it manageable, his clients appreciate his understanding and solutions to their operations.

Food Waste Stops with Me is a collaboration between Metro, Oregon Restaurant & Lodging Association, Oregon Department of Environmental Quality, City of Portland and other city and county governments to help food service businesses reduce food waste.
