Presented by Ruth Leyse-Wallace, Ph.D.
About the Speaker, Dr. Leyse-Wallace received her B.S. degree from the University of California, Davis, and her Ph.D. from the University of Arizona, Tucson, Arizona. She has practiced clinical dietetics at the Menninger Foundation in Topeka, Kansas, and later at Mesa Vista Hospital in San Diego, providing nutritional care for patients of all ages hospitalized for eating disorders, alcohol and drug abuse, and general psychiatric diagnoses. She served as an adjunct faculty member at Mesa College in San Diego. She is an active contributor to the Behavioral Health Nutrition dietetic practice group of the Academy of Nutrition and Dietetics.
Course Abstract, Experimental and observational evidence demonstrates that mild and severe nutrient deficiencies and toxicities influence mental status: the state of mind and state of brain. Treatment for mental health concerns needs to include nutritional screening and/or assessment for optimum outcomes. This presentation includes information regarding signs and symptoms of nutrient deficiencies for selected nutrients, case study examples from psychiatric and nutritional literature as well as resources for evaluation of nutritional intake and further investigation of the subject.
Course Objectives, At the conclusion of the workshop, the attendee will be able to:
• Describe nutrients whose deficiency may influence mental status
• Identify signs and symptoms related to poor nutritional status
• Identify foods that are sources of nutrients that are important to supporting good mental health
