An intensive 2 day course in all things Piggery with Blaze from Bad Baxter Farm. Saturday & Sunday, November 9th & 10th from noon to 3 PM Come One day or save $20 and come both!

Lets discuss pig raising, pig harvest & pig eating! Learn to harvest your own small homestead hogs on the farm. Know your food, know your foods food! Know that your pastured pork went from farm to table as happy and humanely as possible. Learn to do it all yourself to remove the added stress of taking your pig to the processing facility and even wondering if you are getting the same pork back in return! There is no better way to learn than to witness in person, ask questions and get hands on experience!

This will be a small gathering of hands on learning from dispatch to cuts to bacon, ham & more!

DAY 1 - SATURDAY "GETTING PIGGY WITH IT" Noon to 3 PM - You will be involved with the discussion of ethical meat raising and cull techniques as well as witness an on farm cull. We will join in, all hands on for a Skinning and discussion on scald & scrape of a homestead hog, discuss tools of the trade as well as money saving tips and advice. You will witness evisceration techniques, splitting and hanging. Discussions will include castrating, boar vs gilt vs sow, what to feed, how much space is needed and more. The pig will have to rest and cool overnight before moving on to day 2.


DAY 2 - SUNDAY "Culinary Porkin" - We will then bring out 1 of the sides of previously processed pork to do a hands on demo of primal cuts, to butcher cuts: from ribs & chops to bacon and ham. Then we will get down to business and discuss, demonstrate and get hands on with the most important part...the cure. How to cure your bacon and ham. We will start both a bacon cure and a ham cure as well as grind sausage and go over several recipes from basic breakfast sausage to my favorite...pork choizo, brining vs curing, the uncure and everything in between! Discuss deydrating, packaging, rendering lard for cooking, using all parts of the pig and more.

This day sometimes runs long as we have a lot to cover BUT anyone wanting to hang around can celebrate learning an important homesteading trait with some complimentary samples. BYOB for drinks & discussion by the fire.

All participants will have access to the recipes we use, bring a notebook, extra chairs for hanging by the fire and be ready to learn, laugh and celebrate!
