Celebrate the season with a festive, hands-on evening of creativity and sweet holiday cheer. Join one of ICE’s expert pastry chefs, Chelsea Burgess, for a delightful cookie decorating workshop that brings classic techniques—and plenty of sparkle—to your winter celebrations.

You’ll begin with a guided introduction to royal icing, learning how consistency, color, and simple tools can transform a plain cookie into an edible work of art. Watch a live demo showcasing piping, flooding, and decorative detailing, then roll up your sleeves and practice each technique as you decorate a curated selection of holiday cookies. Whether you’re a seasoned baker or picking up a piping bag for the first time, you’ll learn professional tips to elevate your cookie decorating at home.

To keep the evening extra merry, we’ll serve a beautifully arranged charcuterie board and festive drinks while you work. Enjoy great company, seasonal flavors, and the chance to craft a box of stunning cookies to take home—perfect for gifting, sharing, or savoring yourself.

Meet Chelsea Burgess - A Florida native, Chef Chelsea has a bachelor’s degree in Baking and Pastry from Johnson & Wales University. Now working in the industry for over a decade, Chef Chelsea has worked the pastry line at Rose McAdoo, Madison Lee Cakes, Cake Power and Nine Cakes where she was Lead Cake Artist. While her experience has primarily been in the New York wedding industry, she’s also worked in high-volume production bakeries and catering facilities. She has also assisted in projects that have been featured in NPR, The Knot, Martha Stuart, Vogue; she has also appeared on the Food Network (but prefers to be behind the scenes). “I believe that attending school has opened up so many doors for me. It’s hard to imagine what my career would look like without it,” she says. Chef Chelsea joined the Institute of Culinary Education in 2022, teaching recreational classes, as well as cooking for private events and parties. When she’s not baking, Chef Chelsea can be found tending to her “indoor jungle” of tropical plants, working as a florist in creating large-scale installations and crafting in various ways. “I am always making something with my hands,” she says.
