About the Chef
Named by Zagat as one of the "10 Southern Chefs to Watch" Joshua Walker started his culinary career in New York City less than a decade ago. After receiving his MFA from Brown University, he worked in art and design for three years before making the rounds at NYC kitchens including Momofuku Ssam Bar, Olana and Silent H.
In 2009, Joshua and his wife Duolan left New York on an eight month honeymoon tour across Asia where where they ate, cooked, farmed and collected recipes. Joshua returned briefly to New York in 2010 to help open the restaurant Cafe Colette, but settled in Charleston where he has roots on his mother's side.
It was in Charleston that the vision of his own concept was born. Asian soul food. The common ground he found between Southern and Asian cuisines -- the history and importance of rice, a reverence for fried chicken, use of pork fat & the preservation of food, different pickling techniques, & a prevalence of pork over beef -- allowed him to express how much of Asian cuisine had the same element of soul found in Southern comfort food. Xiao Bao Biscuit was recognized as one of Bon Appetit Magazine's Top 50 Best New Restaurants, 2013, and featured in the New York Times restaurant report in 2014.
