Join us as Twenty Five Lusk Executive Chef, Matthew Dolan, presents on the intriguing topic of sustainable seafood as he demonstrates a dish from his new (and first!) cookbook, Simply Fish: 75 Modern and Delicious Recipes for Sustainable Seafood. Simone Jones from the Monterey Bay Aquarium will join him for a Q&A portion, when they will expertly describe the need for more sustainable measures in the food system, especially as it relates to the health of the oceans.

Chef Dolan will be signing copies of his book, which will be available for purchase before and after the event.

About Chef Matthew Dolan
A graduate of The Culinary Institute of America in Hyde Park, New York, Chef Matthew Dolan has been passionately developing his culinary talents since he was fourteen years old. Chef Dolan followed his passion to the Café des Artistes in Manhattan, Emril's Restaurant in New Orleans, through Europe and then to San Francisco. At Twenty Five Lusk, Dolan realized his dream of building his own kitchen, where he continues to deliver inspired cuisine that demonstrates his passion and commitment to excellence. In November of 2014, Dolan opened his second restaurant, Tap 415, in San Francisco's Westfield Centre.

His first cookbook, Simply Fish: 75 Modern and Delicious Recipes for Sustainable Seafood, was released in May 2017. He hopes the book will bring fish back into the home kitchen and help prepare delicious and easy meals for themselves and friends, while enjoying the local bounty as well as health benefits.
