About the Instructor: Joan Olson owns Prairie Drifter Farm, a 33-acre certified organic vegetable operation in Litchfield, MN with her husband and two kids. Joan worked on four diversified vegetable operations and managed a small CSA and intern program before beginning her farm in 2010. Currently, Prairie Drifter Farm serves a 125-member CSA as well as several small restaurants, co-ops and food shelves.
