BESPOKE is for guests who demand memorable tastes and singular experiences. The journey begins on Tuesday night with guest chef multi-course charity dinner at Travelle. On Sunday, Grand Cochon begins with a VIP entry - 55 minute early access and a generous donation to Piggy Bank. Cochon555 Chicago 2017 Winner and Travelle Kitchen + Bar Chef Ricardo Jarquin hosts a one-night-only, dining experience with past Cochon555 winners including Tim Graham (Twain), Andres Padilla (Topolobampo), Nicole Pederson (Found), Nathan Sears (TheWit Hotel Chicago), and more. Wine and cocktail pairings will accompany the meal with passed appetizers from each chef. Cochon555 Chicago 2017 Winner and Travelle Kitchen + Bar Chef Ricardo Jarquin hosts a one-night-only, dining experience with past Cochon555 winners including Tim Graham (Twain), Andres Padilla (Topolobampo), Nicole Pederson (Found), Nathan Sears (TheWit Hotel Chicago), and more. Happening for the first time ever in Chicago, Jarquin represents the city in the Grand Cochon, with hopes of being crowned this year’s “King of Porc.” Wine and cocktail pairings will accompany the meal with passed appetizers from each chef. Proceeds from the event benefit Piggy Bank, an organization dedicated to educating farmers and chefs about heritage pigs and breeding. The evening begins at 6 p.m. with a cocktail hour meet-and-greet, giving diners the opportunity to mingle with the chefs and Cochon555 Founder Brady Lowe. The pork-centric meal commences at 7 p.m., showcasing dishes incorporating pork from Meadowbrook Farm in Benton Harbor, Michigan: the same farm Chef Ricardo worked with to win the Chicago Cochon555 competition. The BESPOKE Food Symposium is meant to bridge the worlds of academia, food, and hospitality. An inspirational forum, it addresses Big Ideas as they relate to food culture and identity while exploring topics that have real impact and resonance in the greater world and industry of food. Guests experience not one, but two keynote speeches – intellectual riffs on a common theme – as well as hard-hitting panels aimed at finding solutions and addressing problems in the business of food. Guests and speakers interact in intimate talking circles for the closing hour of the day. Event Details

Grand Cochon is the tour's year-end finale in which 14 chefs from 14 cities cook their three best bites while competing to be crowned as the nation's King or Queen of Pork for 2017. Some ten heritage breed pigs in all are featured in this nose-to-tail culinary showdown. The chefs will serve more than 2,000+ pounds of responsibly-raised heritage breed pork, all in the name of supporting family farms and a future of safer, more honest, and delicious food.

Communal feasting is an integral part of the Cochon555 culinary fabric. Beyond the 42 chef-competitor dishes - all told, some 2,500-plus pounds of heritage pork from family farms - guests will sample beef tartare featuring Sabatino truffles prepared by Joshua Pollack of Rosenberg’s Deli in Denver paired with the wines of Antica Napa Valley; a farmhouse cheese spread from Pastoral Artisan Cheese Wine & Bread featuring Savile Row and Cypress Grove; a pop-up bakery from La Brea; a Salami Snack Bar from Creminelli and Divina; organic pâté offerings from Les Trois Petit Cochons; a Luxury Butter Bar featuring truffle butter, foie gras, and more; and Chef Zac Young of Craveable Hospitality will create an innovative take on pastry presented by Perfect Puree of Napa Valley.

Cochon555 events are theaters for innovative spirit, wine, and cocktail experiences. Libations include a special cocktail experience inside the Glenfiddich Experimental Dome, Smoked Old Fashioneds with Breckenridge Bourbon; The Manhattan Project presented by Poached Jobs; the Tiki Bar featuring Angostura Rum and Perfect Puree of Napa Valley; a Courvoisier Cognac cocktail and “neat” tasting with hand-crafted chocolates; and a Heritage Rum Cart. New pours incorporating the historic bitters and luscious rums of Angostura will be unveiled at the Swizzle Bar. An array of wines grouped under the “5 Winemakers” banner featuring Scholium Project; Kosta Browne, CIRQ, Pax Wine Cellars; Silver Oak and more. Other experiences include the Welcome Lounge featuring Buffalo Trace; non-alcoholic sodas from DRY Sparkling; Wines of the World and Azzurro Wine Company.

Enthusiasts can sign up for a national cocktail punch competition (Punch Kings) combined with an innovative day-long food summit held (BESPOKE) at the Chicago Athletic Association on Saturday, September 30. Kicking off at 9:30 a.m. in the Tank Room, keynote speakers and panelists will bridge the worlds of academia, food, and hospitality with BESPOKE: An Exploration of Taste & Thought. Immediately following, 14 barkeeps from around the country compete in the most notable punch-themed celebration featuring Breckenridge Bourbon. Tickets start at $55 (students with ID) / $75 (general admission) and are available

COCHON555 2017

Created in 2008 in response to the lack of education around heritage breed pigs, Cochon555 is a nose-to-tail competition dedicated to supporting family farmers and educating chefs and diners about the agricultural importance of utilizing Old World livestock. We work with every type of restaurant and bar imaginable – Mom-and-Pop, farm-to-table, BBQ, Michelin star - and our participating chefs all share one core value: they source products responsibly. Our epic 2017 culinary tour starts in New York City and culminates with the finale, Grand Cochon.
