GRAND BO SSAM
The Grand Bo Ssam presented by Foster’s Craft Cooking is an epic communal feast starring bo ssam (Korean for “wrapped”), which includes succulent, slow-roasted pork shoulder, kimchi, rice and condiments to be wrapped in lettuce leaves and devoured. The contrast of textures and flavors, the interplay between tender, savory pork, crunchy, spicy kimchi, fluffy, mild rice and crisp, fresh lettuce and herbs is truly a revelation.
Join us for an unforgettable evening of delicious food grown and crafted by local farmers and producers and expertly prepared by Jaret Foster—chef, farmers market director and bo ssam enthusiast. The meal, served family style and eaten with your hands, is meant to be tactile, fun, indulgent, and a little bit messy. It is a shared experience that engages your senses, invites conversation and celebrates community. Here’s what you can expect:
Oysters on the half shell
Grand Bo Ssam, served with all the trimmings
Cookies, chocolates, citrus, spirits
Beer, lots of beer
Featuring oysters from Linda Brand, kimchi from Choi’s Kimchi, chocolates from Alma Chocolate, beer from Upright Brewing, cocktails from New Deal Distillery, and produce from Portland Farmers Market. Tickets inclusive of all food and drink.
Oysters. Pork. Beer. Chocolate. What more could you ask for?
ABOUT JARET FOSTER AND FOSTER’S CRAFT COOKING
Jaret Foster knows good food.
If you shop at Portland Farmers Market, you already know that as Operations Director, Jaret puts on world-class markets every week, but did you know that he is also a world-class cook? As a classically trained chef, he honed his skills cooking in kitchens on both coasts for over ten years, all the while researching nutrition and working on small farms.
Jaret’s love of food from farm to table and direct access to the region’s best growers, ranchers and producers inspired him to create Foster’s Craft Cooking, a boutique catering and event company, where his dedication to the craft of good cooking and using stellar ingredients is evident in each special event, cooking class and small gathering he creates.
